JUST egg.. part deux!

As noted in JUST Egg. But not.. fake eggs are not quite right. After mediocre enjoyment, I explored the JUST brand a bit further – and tried these frozen egg ‘folds’ next. How do ya cook it, you ask? In the toaster. Like toast. Except yeah, its mung bean egg substance. It cooks in the toaster but does not toast. Or I was terrified to over-toast it because I don’t ever want to know what burned mung bean smells like.

Anyway, similar to its liquid state, a little extra flavor helps this product. In this case in breakfast taco form, topped with some fried up carnitas, cheddar and some green dragon.

So far, the frozen version of the mung is preferred.. by customer and the chef! The liquid stuff can REALLY stick to a pan, so they recommend a nonstick. I’ve stopped using nonstick mostly, because Acton water gives us enough PFAS already.
